Salmon is a ‘healthy for you to eat’ dish and even though this weekend was made up of turkey, turkey and more turkey. We ‘squeezed’ in a salmon dinner on Sunday.
In my recipes for the Feast Your Eyes Campaign for the American Academy of Ophthalmology (A campaign I was selected as healthy chef spokesperson to develop recipes that provide minerals and benefits for the eyes) I use seafood such as salmon and tuna for many dishes. Research has shown that eating healthy along with regular eye exams delays Macular degeneration.
We cooked it a few different ways this weekend. Here are two different ways to eat salmon and serve with a bottle of dry white wine or… now that the Holidays are upon us, try some sparkling, dry, white champagne and/or Prosecco to go with this dish
*Before baking, rub both sides of salmon with lemon juice and oil, place salmon skin side down in baking pan or casserole dish to bake.
* Before baking, cover salmon with a bread crumb topping made this way:
1 cup freshly made (plain) breadcrumbs
2 tsps melted butter
1 tblsp capers
Top salmon with fresh breadcrumbs, then sprinkle with capers and drizzle melted butter on top. Bake in preheated oven 500 degrees for 6-8 minutes.
*Garnish the dish with fresh dill or tarragon.
