Easter (Pasqua) is a special Holiday, a celebration of not only family and friends but also good food and lastly with the Spring Equinox here a celebration of new beginnings!
So even though we are conditioned to start everything fresh for the New Year in January..you can celebrate Easter -if not for its’ religious significance -but for its’ spiritual non-denominational one. A day to remind us to open up our hearts and minds to new things.
If you don’t typically celebrate Easter as a Holiday with friends or family, you can celebrate it in your heart and mind as a time to begin anew.
Just like the fresh flowers that are bringing in Spring and the new, fresh promise of what is to come, hopefully all good things. So use the Holiday to reflect on beginning anew and starting fresh…

One of my favorite recipes for Easter:
Colomba con Crema Alle Fragole (Colomba is a typical bread made for Easter in Italy, you can find it in specialty stores)
(Colomba with Strawberry Cream)
1 colomba
1 lb of fresh strawberries
4 egg yolks
1/2 cup sugar
1/4 cup flour
3/4 cup milk
1 tsp of vanilla
Wash, and hull strawberries. place in food processor and puree.
In separate bowl-beat egg yolks with sugar, add in flour, vanilla, milk- blending with wire whisk.
Place in saucepan and bring to a boil stirring with whisk or wooden spoon continuously. Right before i begins to boil remove from heat and stir in pureed strawberries.
Slice Colomba and serve with cream sauce on top of slice.
