Mother’s Day Brunch-Cheesecake Torta with Fresh Strawberries and Oranges and Food Blogging 101

If you are preparing for a Mother’s Day Brunch here is one dessert you want to include..light and healthy also easy to make so you can spend more time with Mom!

Cheesecake Torta with Fresh Strawberries and Oranges

8 ounces  ricotta cheese (whole or part skim)

8 ounces plain Greek Yogurt

8 ounces (Regular or Light) Cream Cheese

2 eggs

1/2 cup sugar

1 tsp vanilla

1 tsp grated orange zest

4 ounces of unsweetened dark chocolate

5 fresh strawberries hulled and sliced

1/2 orange, peeled, cut into slices

1 package of strawberry gelatine

Crust

16-20 Savoiardi or lady fingers or graham crackers-crushed

1 tablespoon butter melted

1 tablespoon sugar

 

Crush cookies, add in melted butter and sugar and place in bottom of spring form pan that has been covered with parchment paper. Press till the crust goes partly up the sides of pan

Place ricotta cheese, cream cheese, yogurt in bowl, add in sugar and then beat in eggs one at a time, add in vanilla, beat till well blended. Crush dark chocolate and stir  pieces into.Add in orange zest.  cream cheese mixture.

Preheat oven to 350 degrees for approximately 50 minutes or until firm. Let cool. When cool top with strawberry slices, orange slices. Brush gelatin on top of fruit and place in refrigerator till gelatin is set
